Gheimeh is a Persian Stew that is usually served at large gatherings, It’s made with ground meat, I use beef, yellow split peas and potato and it is served over rice. Gheimeh is a beef and split pea stew made with dried limes and cooked in a tomato base, usually served with fried potatoes or cooked eggplant on the top. In the month of Muharram, a holy month in the Iranian calendar this dish is cooked and served on the street to those in need.
The word Gheymeh comes from how the meat is cut into small cubes in this recipe and unlike other Persian stews that have larger chunks of meat, Gheymeh meat is usually cut into about one inch cubes.
There are 3 types of Gheime:
- Gheimeh with fried potato
- Gheimeh with cooked eggplant
- Gheimeh Nesar
